All mini pastries must be ordered in one of two ways:
1. Individual types of pastries must be ordered in quantities of one dozen or more.
Example - one dozen cream puff swans.
2. Any quantity of mini pastries may be ordered in an assortment. This assortment will always be a wide selection of mini pastries that Cassis has made fresh that day. Quantities over a hundred pieces drop to $1.00/pastry.

Mini Mousses- Cassis Bakery offers an extensive line of fresh mini mousses in which anyone can find a favorite. Each mousse is molded on a base of sponge cake and lightly flavored with a liquor to accent the specific mousse flavor. Each is topped with either fresh fruit or fine imported candies. Below is a list of available flavors of mini mousse and their accents:
Chocolate- Lightly flavored with Coffee Brandy. $1.40
Hazelnut- Lightly flavored with Frangeliko liquor. $1.40
Strawberry Mousse- Covered with ganache and lightly flavored with lemon simple syrup. $1.40
Lemon - Glazed with apricot glaze and lightly flavored with lemon simple syrup. $1.40
Orange - Glazed with apricot glaze and lightly flavored with Grand Marnier liquor. $1.40
Raspberry- Glazed with apricot glaze and lightly flavored with Chambord liquor. $1.40
Cassis- Dusted in white chocolate and lightly flavored with Cassis liquor. $1.40
Mango- Glazed with apricot glaze and lightly flavored with lemon simple syrup. $1.40
Russian Potato- A rare treat, the Russian Potato is a dense hand rolled chocolate cake prepared with a variety of rums and liquors and dusted in the finest cocoa. $1.40

Cream Puff Swan- This delicate masterpiece is made from a sculpted pate a' choux and filled with real whipped cream. Finally, a hand piped chocolate neck brings the swan to completion. $1.40

Mini Almond Pear Tart- This classical French tart is a made from a buttery tart crust filled with frangipane pastry and baked to perfection. A layer of freshly fanned pear is placed on top of the filling and glazed with apricot glaze. As a finish, hand toasted almond slivers are encrusted around its rim. $1.40

Mini Éclair- A traditional favorite, the mini eclair is made from a bite sized pate a' choux filled with diplomat cream. The eclair is then finished with a coating of ganache and G clef design. $1.40

Hazelnut Cluster- This confection-like pastry is made from baked frangipane topped with a rich vanilla buttercream. Three hand-roasted hazelnuts are added to the wafer as the pastry is covered with ganache. $1.40
