 Cassis Bakery Fine European Torte's


Rum Truffle Torte'- How about hint of raspberry in a deep velvety chocolate with overtones of fine rums and liqueurs? Our rum truffle torte' is surely one not to be missed at your intimate dinner party. The torte' is three layers of our signature chocolate chiffon sponge cake soaked in rum, filled with the darkest Swiss style rum truffle filling, set on a base of buttery tart crust, and iced with real chocolate whipped cream. Finally, a subtle layer of fine raspberry preserves graces the bottom of this torte' to push your taste buds over the proverbial edge.

 


Dobos Torte - A traditional European favorite, the Austrian Dobos torte' is an industry standard in fine pastry shops and naturally Cassis Bakery. This delicate and sumptuous torte' is known for its numerous layers of alternating rich dobos sponge cake soaked in coffee brandy and chocolate butter cream. The torte' is then covered with chocolate buttercream and garnished with the hand-made caramel wedges that the torte' is known for. 

Opera Torte- A beautifully elaborate torte', the Opera torte' is known for its three layers of sweet jaconda sponge cake made from almond based flour and soaked with coffee flavored brandy The torte' is filled with a rich coffee butter cream and covered with a dark chocolate ganache. A superb dessert to accompany an afternoon espresso or cafe'.

 


 

Wine Cream Torte- For an especially light yet wonderful rich torte' this Bavarian style dessert is perfect of any full course dinner. The main feature of this torte' is its special whipped wine cream filling which sits on a layer of our signature vanilla chiffon sponge cake and base of fresh whole strawberries. The torte' is then iced with fresh whipped cream. The wine cream of this torte' makes it a fine dessert to mark any special occasion.

Zebra Torte- A visually dazzling torte', the zebra torte' is roulade style cake. This means that the torte' is made of rolled layers chocolate or vanilla chiffon sponge cake that create striking vertical stripes in each slice of torte'. Layers of chocolate or vanilla whipped cream bind the sponge cake into the pattern and fresh whipped cream ice the cake. A beautifully festive torte'.

 


Charlotte Russe- The famous charlotte russe was first served to the Czars of Russia and now can be served to you at your special occasion by the chefs of Cassis. This torte' is three layers of a subtly sweet frenchipan sponge cake. The torte' is filled with a specially prepared mousse of your choice using only the finest imported chocolate, nuts, and liquor as ingredients. The charlotte russe is available in chocolate, hazelnut, or raspberry. Imported ladyfingers cookies ring all of the varieties. 

 


Nirvana Torte'- This classical torte' is three layers of our signature chocolate chiffon sponge cake soaked in real Kailua. The torte' is then filled with one layer of our tiramisu filling and one layer of chocolate mousse. Finally the torte is covered by cocolate ganache and topped off with a little bit of cocoa.


Sacher Torte - This classical torte' is three layers of a special dense chocolate and hand-ground toasted almond sponge cake soaked in Amaretto. The layers of cake are covered in fine apricot preserves and the whole torte' is covered in a dark chocolate coating. This torte' combines the flavors of rich chocolate, tangy apricot, and robust almonds, a rare and excellent medley of tastes. Bon Appetite!

 


Pithivier Torte- This strikingly unique torte' was named after the town of it's origin Pithivier France. This delighted torte' is a shell of delicate fresh puff pastry glazed in apricot. Inside it's flaky exterior is a special mixture of frenchipan pastry and diplomat cream. The combination of puff and frenchipan pastry makes a delightful texture to this exquisite torte'.


 Havana Torte' - Many Of Our customers feel that our Havana is one our finest pastry. Now the same fresh smooth meringue finish of the Havana pastry available in a torte' form in the traditional Havana torte'. The torte' is two layers of deliciously smooth meringue and a layer of almond based frenchipan sponge cake. Finally the torte' is covered in a dark ganache coating with chocolate cigarette garnishing.

 


The King's Crown -

A torte created by our owner and master pastry chef, the kings crown is truly a show-stopping dessert. The interior of this royal cake is three layers of subtly sweet frenchipan sponge cake soaked with Chambord. The cake is filled with two generous layers of a special raspberry mousse. The cake is then surrounded by a layer of petit fours, which are frenchipan pastry and handmade marzipan. This inner layer is then surrounded by a dazzling layer of patterned frenchipan pastry. The top of the king's crown is expertly a domed with fruits and glazed with apricot to make dessert shine like a mantle of nobility. With out a doubt, Cassis's finest presentation!
